Kielbasa Pesto Pasta with Veggies : Budget Friendly Mealtime




The first part is how to make Pesto. You can use fresh herbs I just didn't have any. I don't have a food processor or blender but you could certainly use those. I have a magic bullet which worked fine.

3 teaspoon dried basil
1- 1 1/2 spoonful chopped garlic (I buy chopped garlic in the jar and keep in fridge)
2 teaspoon dried Italian seasoning
1/4 teaspoon black pepper
3-4 tablespoon Parmesan cheese
Handful or two of fresh spinach
Olive oil (I used extra virgin olive oil)

First put all dried herbs in and blend they will become a fine powder. Next add garlic, fresh spinach, and Parmesan blend together. Add a few drizzles of oil and blend. Continue to add oil until you reach the desired consistency. I made more of a paste. This is something you can adjust amounts based on your personal tastes. I added spinach because I had some left but you could leave it out.

       Kielbasa Pesto Pasta with veggies

2 packages polish kielbasa sliced
1 lg bag pasta of your choice(or two small bags)
Pesto sauce (homemade or store bought)
Frozen broccoli & cauliflower

 1. Place sliced kielbasa in frying pan and cook until browned. The pan will darken as it browns, you can add a little water to the pan it will give them a blackened look. I drained grease off a couple times and added just a touch of water a couple times until it was to my liking.




2. While cooking meat boil water for pasta and cook as directed on package.
3. Cook frozen veggies. (I use a microwave steamer)
4. Drain pasta put back in pan, add browned kielbasa and stir. Add pesto a spoonful at a time and mix together until evenly coated. Add as little or as much as you like.




Dinner is done. Serve with veggies on the side or mix them in. This could easily be a one pot meal.
